If kneading by hand, place your dough onto a lightly floured surface and knead the dough for no less than 10 minutes. If using a stand mixer, have it knead the bread for the same amount of time. Now place each dough balls into two lightly greased bowls in a warm spot on your counter and cover them with a lid or a damp towel. Let the dough sit for another 30 minutes or longer. You can now either start making your pizza, or put it in the fridge for later. Mix yeast, sugar, and water
Let sit until a frothy later settles on top of the water
Add flour, salt, and olive oil to mixture and mix until it turns flaky
Knead dough by hand or mixer for 10 minutes
Place dough in a gently greased bowl for up to 2 hours to sit and rise, with a damp cloth over the bowl.
After 2 hours, you can now separate the dough.
With oiled hands, fold dough by pulling it out and under itself over and over again.
Place each dough bowl in a lightly greased container and cover them with a lid or damp towel for 30 minutes or longer.
After the time you can now either start making pizza or place in fridge to make later.
